Food Safety

This unit has conducted research to support policy development for the government, as well as advanced research in understanding on food microbiological and chemical safety during food processing and storage. The unit organizes workshops and offers consultancy on microbiological and chemical food safety, GMP, HACCP and risk assessment for the food industry. Our research focuses are innovative microbial inactivation, mechanism of natural antimicrobials and their application in food, development of molecular detection method on food safety, and food chemical safety and toxicology in particular mitigation to inhibit food toxicants formed during food processing.
