This research group focuses on development of food product relevant to current trends of consumer and social needs. Current research topics on several food categories have been conducted, such as plant-based product, nutritious and functional food and beverage, reduced calorie food, food for elderly, flour based functional food product, as well as functional snack using extrusion process. The research group is also interested in improvement on functional property of food ingredients emphasized on innovative and sustainability concept.
