EMERGING and MODERN FOOD PROCESSING and TECHNOLOGY
Emphasizing innovation in food processing and technology, integrating traditional principles with cutting-edge advancements to address global challenges in food sustainability, safety, and quality. Together, the researchers employ an interdisciplinary approach, merging food science, engineering, and technology to pioneer sustainable and effective solutions for the food industry. Transformative, novel and disruptive processing technologies are explored and applications, with a particular emphasis on the interplaying between methods including innovative freezing and drying, advanced vacuum impregnation, high-pressure processing, shear heat milling, 3D-printing, ohmic heating and electromagnetic wave applications (cold plasma, microwaves, ultrasound). To boost process efficiency, optimize processing techniques, extend shelf life, and improve product quality and nutrition, the computational tools, including simulations and data analytics are also integrating.
